Our carbon positive ambition
Greenhouse gas (GHG) emissions from human activities are the main cause of the current global warming effect while CO2 emissions have increased by about 90%. To help reduce our environmental impact from the greenhouse gases, we have set a target to become a carbon positive and energy efficient restaurant. Our goal is to replace all our existing cars with electric cars for our day-to-day operations and our delivery service. We are also looking at lowering the energy consumption in the preparation and storage of food in our kitchen by using low power-consuming appliances and equipment.
100% recyclable packaging by 2025
Thousands of plastics used globally end up in a landfill every year, while it is estimated that by 2050, there will be more plastic than fish in the world’s oceans. To help prevent such alarming consequences on our planet, we restructured our waste and packaging strategy, and committed to ensuring that more packaging either remains in loops or has the best possible opportunity to be recycled.
To do so, we are replacing our plastic packaging with paper that comes from FSC certified recycled forests. We want to move away from the “take, make, dispose” linear model to a more circular model that either extends the lifecycle of a plastic product by "reducing, reusing, recycling, recovering".
Rethinking food waste
Food disposal has become a growing concern, and while one in nine people do not have enough food (that’s some 795 million people), 1.3 billion of tonnes of the food produced is wasted. To help spread the word about shopping and using leftovers wisely, we launched the “Fight Waste” initiative which is dedicated to raising awareness on the way we eat, promoting the principle of reuse and repeat rather than dispose, and making recycling a lifelong habit. In addition, we will invest in an organic waste composting machine to process all the food scrap of our restaurant and produce organic fertilizers for our local farmers.
Our Fight Waste initiative has an inclusive four-part model:
1. Moderate: Raise consumer awareness of the impact that excessive food consumption has both on our health and the environment and encourage moderate food consumption.
2. Repeat: Promote the idea of “reuse” by encouraging people to store any excess of food in our Fight Waste Box to consume the following day.
3. Recycle: Making food and package recycling a lifelong habit.
4. Treat: Collecting and composting our in-house food scraps to offer to our farmers in Cyprus.
